What I Eat In A Day 2 // Vegan

A lot of you seemed to love my last What I Eat In A Day post, so with more and more people converting/trying out being vegan, I'm back with another.  By no means is this the healthiest vegan WIEIAD but this is still incredibly wholesome and beneficial. I just want to try and make veganism accessible and enjoyable for everyone. Here is a few more recipes and favourites of what I eat in a typical day being vegan (it's not all rabbit food and lettuce).


BREAKFAST:


My latest breakfast obsession is smoothies. They are such a quick, easy and nutritious filled way to start your day. I tend to prepare my smoothies in advance by putting different cut up fruit into bags in the freezer then I can take one out each day to use. This one is about half the size of the one I usually have (I was running low on fruit), so this recipe would typically be 4-5 bananas, 1/3 cup of coconut milk and 1tbsp of plain soya yoghurt. I've also been using the Pure Chimp Matcha Green Tea (100 VEGAN) in these. I have been loving all the benefits it has been providing me, especially the reduced redness in my skin. I can't wait to try it out in other recipes!



LUNCH:


This is one of my all time favourite lunches and I go and encourage everyone to try it out now!! Inspired by Monami Frosts Pasta Salad (watch video here)  I am obsessed with this super healthy and quick lunch. All this consists of is mixed salad leaves, cucumber, sweetcorn, pasta (I used wholewheat), kidney beans, chickpeas and hummus. You can add whatever other vegetables and pulses that you want but this pasta salad is so yummy and you can eat it by the bowl fulls!



DINNER:


This may not look like a lot but its filling and delicious. For dinner I had a homemade tortilla wrap, vegan sausage (I always find Linda McCartney the best), hummus, sweetcorn, fried onion and spinach with a side of hoisin sauce (Blue Dragon brand has my favourite one suitable for vegans). You could use shop brought tortillas but I didn't have any so I used my trusty recipe from the BBC Good Food website (recipe here). If this isn't enough for you this also tastes so good with sweet potato fries.
