I'm not a sweet food person at all, I'd rather eat my body weight in hummus and chips than chocolate, so when I find a recipe and sweet good that I love it's going to be special. Vegan Cinnamon Rolls are my go to binge food and I love making them. I've found and adapted a recipe which makes these is so easy to make with everything you can find in your cupboards at home. Dig in to a pan of sweet, hot, gooey goodness!!!
Ingredients(makes 16 medium sized rolls):
Dough:
- 3 cups of plain flour
- 2 tablespoons of caster sugar
- 3 1.2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 3 tablespoons of vegan butter
- 3/4 cup milk
- 4 tablespoons of vegan butter
- 1 cup of brown or golden granulated sugar
- 5 teaspoons of cinnamon (less or more to your taste)
Glaze: (depending on how runny you want the glaze, add more milk)
- 1 cup of icing sugar
- 1/4 cup dairy free milk (I use coconut milk)
Instructions:
- In a large bowl mix the flour, sugar, baking powder and salt.
- Add the butter and milk and stir to form a soft dough.
- Set aside to rest whilst you make the filling.
- In a small bowl combine the butter, brown sugar and cinnamon for your filling.
- Spread 3/4 -1/2 the mixure across the bottom of the pan/tray.
- Roll out the dough on a floured surface into a large rectangle shape around 1 1/2 cm thick.
- Spread the rest of the filling out onto the dough.
- Roll up the rectangle into a long thin tube shape.
- Cut the roll into 16 pieces (depending how big you want them) and place into the tray.
- Bake for 20-25 minutes.
- Once baked, drizzle the glaze on top.
