What I Eat In A Day | Vegan

I am constantly asked, and scrutinized, by friends and people I meet about what I eat being vegan. Ever since I made this lifestyle change I have become so passionate about food, for the diversity it holds and my new found awareness of what I am putting into my body. 
For ideas and just because I am incredibly nosey, I love to read/watch peoples What I Eat In A Day posts. So for some yummy, healthy and nutritional inspiration I thought I'd share with you What I Eat In A Day.

BREAKFAST:
 Having fruit for breakfast is typical for me and on this day I chose to have a whole mango, 2 bananas, and a few strawberries. I normally eat around 2-3 mangoes in the morning but I only had one left on this day, which is a shame as they are by my favourite fruit and I like to fill myself up in the morning, to last till lunchtime and fuel me for the day.

LUNCH:
By lunchtime I am always eager to cook and I love to make a hearty but healthy lunch, which is why I made an avocado salad with a quinoa, chickpea and broccoli side. A common misconception of vegans is that all we eat is salad. Admittedly I do eat a lot of salad, but I like to be inventive. This salad contained, spinach; grated carrot, courgette and red cabbage; sweetcorn, quinoa, chickpea and broccoli.  With so many things going on this was super tasty!

DINNER:
Another opportunity for me to test my cooking skills and experiment in the kitchen. This day was definitely a chance for me to use up my fridge and cupboard leftovers to create this Buddha Bowl. Buddha Bowls are one of my favourite things to eat because they change up so much but they still have the same idea of greens, veg, and grains in one glorious dish. Steaming my leftover spinach, I roasted some sweet potato, broccoli and onion, and cooked some chickpeas in a mixture of spices and seasonings to add to it. I have to admit it is one of the best dishes I've made.

I hope this gave you some ideas of recipes and a little insight into what I eat in a day.

    I love how creative your meals are as well, mangoes are probably my favourite fruit so I'm all for having that for breakfast.
